How do you make buttermilk


Butter milk is 'usually' what remains when full milk (3%bf) or cream (10%bf) has been agitated to release its butter fat (bf). But if you are trying to 'substitute' a small amount in a recipe, say for muffins or coffee cake -- then adding a tsp. or so of lemon or vinegar to whole milk will do -- or diluting some real yogurt with water or milk, to the quantity the recipe requires.

When cookie recipes call for unsalted butter, does it matter if I use salted butter?


It's not the end of the world if you have to use salted butter in your cookies. It's just better not to as then you can control the amount of salt in the recipe. If you do need to use salted butter just make sure that you leave out any extra salt the recipe calls for(watch out for salted nuts too).

What is the best recipe for cooking corn


There are literally thousands of recipes for cooking corn on the internet. Here is just one of them, if this is not to your liking chose from the wide choice by just Googling for Corn recipes.

Corn on the cob - grilled with Chili and Basil Butter

4 large ears of corn on the cob

Chili and basil butter

125 gr butter
1 large chili
5 large basil leaves
1 clove garlic - crushed
salt/pepper

Peel back the husks from the corn, leaving them attached at the base. Remove silky hair from corn and discard. Fold husks back over corn and tie with a piece of string to keep closed. Some people say you must soak the corn in water for a couple of hours..well, I did not and I think the result was still perfect.
