you have to make sure that bluetooth is turned on.
go to your home screen, touch settings, then general, then bluetooth, make sure the bluetooth switch is set to on.
Then follow your directions for the your headset for pairing, usually it involves holding the power button down for so many seconds, then it will enter a "pairing" mode where the headset is able to be seen by phones.
Once that happens it should pop up on the bluetooth page of the iPhone and it will ask for the devices password. Most devices the default password is 1111.

Let me clarify the matter as to why the bluetooth on apple iphone does not have much functionality. The bluetooth on iphone has been limited only to headsets. It will not give you the privelege to connect onto PC or to other phones because if you transfer mp3 files onto iphones it will not work because the songs that go into your iphone are in the .AAC format or .MP4 format (Not sure either 1 of the 2). Since you are not allowed to transfer songs with other phones, therefore you can not do anything else too! e.g. sending pictures, chat clients on bluetooth and so on.

There is a 3rd party app to take video: Showtime. you can take video for 4 sec. if you want to take longer you have to donate :S

bluetooth on iphone is crippled somewhat.. you cannot for example connect to another phone or a computer like you can with other bluetooth enabled phones.. The bluetooth on iphone can only be used to connect to headset/sat-nav hands free kits etc at the moment.. maybe in a future upgrade they will relax this.

iPhone has had bluetooth since the first model in 2007. With iPhone OS/firmware 3.0 (free for all iPhone users), iPhones are fully A2DP compliant and link with Mazda bluetooth.
My current experience is with a 2010 Mazda3 and iPhone 3GS, where I get phone and iPod functionality via bluetooth (yes, without jailbreaking), though the steering-wheel controls are limited to play/pause and volume only.
