Yeh, you could remove a link. You should check the chain adjustment though, could be slipping. If it is the chain will continue to slip.

Your drive sprocket is probably warn out and will tear your drive link apart there fore stretching your chain...you can take out a drive link to give more chain adjustment...but thats a short term fix up as it will stretch the chain again until it snaps...not a pleasent thing to happen to you...i would get a new drive sprocket and a new chain
