soak some hickory/ oak / mesquite chips any one of these will do, soak them in water for a couple of hours then put them in the pan and turn it on this will burn out any coating on the metal and flavor the grill for smoking leave it on for a good 2-3 hrs on med then on high mke sure you keep the chips replenished

My wife takes a cookie cooling rack (with wires) that fits into a cookie sheet with sides; she then covers the cooling rack with aluminum foil and uses a fork or knife and pokes holes in the foil. She then places the meatloaf (or whatever you wish to bake or roast) on the foil covered rack and puts it in the cookie sheet. The holes allows the fat or other juices to run down to the cookie sheet and the meat loaf is not sitting the fat.
