Viking Oven Temperature Problem

I set my Viking electric range at 400F, yet it operates between 364F and 398F as measured at the center of the oven by my digital thermometer. Is this normal control? If not, how do I adjust? The thermocouples look okay.

Take the oven knob of and in side the shaft of the thermostat there is the adjustment screw for the calibration. first set the oven at 250 degrees and check in 20 minutes without opening the oven door,now check the thermometer. if it's lower turn the screw just lest then a quarter of an inch, the same way the oven knob goes from low to high, holding the shaft of the thermostat so that it will not move.

I know the question is a little older, but maybe it helps someone else... I just did the job and it turned out to be much easier than I thought it would be. The whole burner assembly slides out, so you don't have to work in that small space!

Simply turn off the gas, disconnect the two pipes that go from the oven to the valve (gas and thermostat), disconnect the two door springs from the burner unit, remove the screw that holds the valve, remove the two screws that hold the burner in place and simply slide the thing out. You may have to loosen the right half of the heat protector plate to get it out. That's it.

Viking oven gets warm but not real hot. The coil does not get red and appears to be not working


Typically the problem is with the oven controller. IF your RTD (resistive temperature device) is ok then your oven controller board is faulty. When the oven is turned on (bake mode) the oven controller closes the relay that controls the bottom element and the oven begins to heat. The RTD or thermostat provides a feedback loop to the oven controller. RTDs don't partially fail, they either work or they don't. Since your oven is getting warm I would imagine the RTD is okay. You can verify the RTD by measuring its resistance at room temperature. Remove power from the oven and either remove the RTD completely and measure with an OHM meter or remove leads and measure while still attached to the oven chassis. You may have to remove it if your ohm meter leads won't reach. I don't know your model oven but most RTDs at room temp are about 1.1 kohms or 1100 ohms. If this is the case your RTD is fine and your controller board is bad. Please let me know if you need anything else. Good luck!

Oven temperature is too high 1. Look for welded relay contacts on bake or broil relays. If this
happens, replace oven control (also called clock or ERC).
2. For SELF CLEAN
models: check door lock operation.
3. Look for a high resistance connection
or any other cause of high resistance in the oven temperature sensor circuit.
Check sensor, sensor harness and sensor harness connection at sensor and oven
control. Replace sensor if found defective.

Remember: Oven control
(ERC) measures resistance of sensor circuit, not actual oven
temperature.

I cant get my viking 30inch electric range to self clean. it has a self clean spot on the knob and on the temperature knob but when both in place nothing happens.


You might need to lock the oven door to get the self clean to go on. My stove had a lever which locked the oven door when you pushed it sideways. It was in the middle above the oven door, in the gap... Hope this helps!

Calibration


Electric ovens are calibrated behind the temp knob. Pull the knob straight off of the shaft and look at the back of the knob. There should be a metal slide with a scale and a little set screw. Loosen the screw and move the slide in the direction indicated for your needs.

Oven temperature is +100F warmer than setpoint


Sounds like the wrong module got installed or is defective. Dangerous situation. Call or take it back to whoever installed it. If you did yourself, pull the control module and return it to the shop you bought it from for a new one or make sure you have the correct module by checking the part number on the module itself.
