you will need a new sim card for pay as you go, you will also need the PUK code which is supplied by your service provider (bt) to unlock the phone for use with other networks.

If your phone is an older model it may not support texting. You may need a new phone but without knowing the model number of what you have it's hard to say. You also need to ensure that your carrier has enabled the texting feature on your plan. Best bet is to stop by the carrier's store and let them set it all up for you. You might also prefer a phone with a full alpha keypad if you plan on texting a lot.

No, you will not need to re-enter any 3G data for it to work. You can freely reboot the device without losing any 3G settings.
