Cooking Instruction 3 pound beef tenderloin

It is very lean with little or no fat. Not good to roast. Best three ways would be to;

1. cut into steaks,season and grill them.

2. Cut into two pieces, season, sear for colour, and bake to 135'F internal temperature for medium rare.

3. Cut into two and make two beef Wellington or 4 to 6 individual.

Meat weighs 2llb 20oz how long should i cook it for we like it medium rare ?

The best thing you can do is to buy a BBQ digital thermometer that you place in the meat during cooking. They have a heavy duty wire with a temperature probe on the end. Sear the meat directly over the coals (or hot side of a gas grill), then move the meat to a cool side and then insert the temperature probe and close the grill lid. Cook until it reaches desired temp, for me 125 degrees is perfect. The total cooking time is hard to judge as it depends on your grill cooking temp, but the digital thermometer takes all of the guesswork out of the equation as to when the meat is done.

Can't get temperature over 300 degrees. What could cause this?

If you are using a residential LP cylinder then the check valve needs to be reset. If not, check and adjust the carburetor shutters at the tip of the venturi tube and the set-screw inside the valve stem.
This will correct the issue almost always.

Not smoking

Traeger grills just will NOT smoke at temps much above 200 degrees. I have to stand by my grill continually in the summer to keep opening and closing the lid to let the heat out. That also lets the smoke out. I also have turned the grill off and on to try to maintain the temperature at 180 degrees where it smokes best and cooks low and slow. It's less of a problem in the winter months. Then I find myself setting the temperature higher turning it from low to medium and back to maintain the temperature I want.

We have a charmglow grill. Can't tell you right now what model, but want to know what temperature is medium.

Depending on how the the grill's thermostat reads (Most go to 600 degrees). So, medium would be 300 -350 degrees. Keep in mind, all the temperatures are based on drilling with the hood closed (like your kitchen oven). Once it's opened the temperature will drop significantly

I assume from your question, that you are trying to bake something on the grill. Which is fine, with a little practice, you can bake a cake or bread on the grill, as well as a ham. But, a ham takes a little bit of expertise.

Happy Grilling!

I want to do a london broil on the GF outdoor need temp settings

If you want to cook by temperature, you can get a bbq meat thermometer. I use the one that is shaped like a fork. It can be programed to the type of meat, beef, chicken, etc. and how well done you want to cook it like medium, well etc. It has a digital read out and will beep when the correct temperature is reached.
