You can't do it... if you want change your apple ID and pass you must remember yout id or pass, or you can reset by your number phone. thanks

Im not sure what even they could do...
Try to find your apple id, than you could answer some security questions to recover your pass...

If you can't find your answer yourself on one of those pages.

If you know the answers to your security questions

1. Go to My Apple ID (appleid.apple.com).
2. Select "Reset your password."
3. Enter your Apple ID, then select Next.
4. Select "Answer security questions" as your authentication method. Select Next.
5. Select the birth date associated with your Apple ID, then select Next to begin answering your security questions.
6. After answering your security questions, you'll be asked to enter and confirm your new password. Select Reset Password when done.

If you have access to the email addresses associated with your Apple ID

You will need to restore the iphone in itunes and with iOS 7 you dont need to put a passcode on you just bypass and say no code
you will be able to get it to connect to itunes by putting the iPhoe in DFU mode.
here is how you do it
open itunes and plug your usb cord into the computer.
plug the usb cord into the iphone.
turn the iphone off
now, hold the power button and the home button down for 10 seconds. count it out. the phone will go black. after 10 seconds let go of the power button and continue to hold the home button for 20-25 seconds. you will see the phone pop up on itunes in recovery mode.
click the summary tab and press restore.
once the phone restores it will come to the activation process.
if you can get your itunes account info then go through the process and enter the information. don't put a passcode on. you dont have to.
if you have your itunes info you can accept the activation and restore the iphone from an icloud backup or just start new

try plugging your phone up to iTunes and see if it will work then.
