Blanch them in boiling water for one minute, then blot them with paper towel and freeze them.

Frezze corn off the cob


IF your question is about how to freeze corn after you have removed it from the cob, I put a piece of parchment paper on a cookie sheet and put a thin layer of the kernels on the paper. I then put the cookie sheet, with corn kernels, in the freezer over night. In the morning I remove the cookie sheet from the freezer, pop the corn off the paper and put it into ziplock bage and into my freezer.

I boil my corn on the cob for 5 minutes in water with 1 Tablespoon of sugar (that's optional). Be sure the water is really boiling. If you plan to freeze it, let it completely cool first.

Blanch the ears of corn in boiling water; the National Center for Home Preservation advises blanching for approximately 7 minutes for ears that are up to 1-1/4 inches in diameter, between 7 and 9 minutes for ears that are between 1-1/4 and 1-1/2 inches in diameter and 9 to 11 minutes for ears larger than 1-1/2 inches in diameter. Pull the ears of corn from the boiling water with tongs after the proper blanching time has been met.

Plunge the hot ears of corn directly into the ice water immediately after blanching. Allow the ears of corn to cool for the same amount of time used to blanch them.

Dry each ear of corn completely with paper towels before freezing. This reduces the amount of ice crystal formation on the corn while freezing, which helps prevent the corn from becoming mushy.

How can you freeze corn still in husk ?


I remove the outer layers of the husk leaving the bright green husk, then cut the ends off and place 4-6 in a large freezer bag and seal. This works great and when you thaw it and cook them later, they are just like gargen fresh. The silk comes off easier after they have been frozen.

I love corn on the cob but find that it loses its flavor when I boil it. Someone suggested that I steam it. How does that work?


: I think steaming corn is one of the best ways to cook it (on the bar b q is probably even better), but it's a simple option and much tastier than boiling which zaps the corn of all its good nutrients and flavor.

Wash the corn and strip It of all the husks etc. and place it in a steamer basket. You can brush the corn with oil and any spices that you like. Let it steam for a few minutes over boiling water and eat it fresh for the best results.
