Are you certain that the pattern selector is set for straight stitch and not buttonhole?
Turn the handwheel so that the needle is up and the take-up lever is in it's highest position. Then turn the pattern selector knob through all of the patterns back and forth a few times. Finally, select straight stitch and see if the length works. If not, need to take it to a repair person to determine the course of action.

Sergers can be tricky to thread.
Remove the thread.
Raise the antenna to it's highest position.
Open the tensions - setting zero.
Lift the presser foot.
Open the door on the serger and turn the handwheel until the upper looper is at it's highest point.
There should be a threading guide on the front of the machine or on the inside of the door.
Follow the threading sequence as this greatly affects the stitching.

For the rolled hem: the needle is in the O2 or right position, the length is 1.5 in the rolled section- you will see this, if you look on the side of the bottom knob- you can decrease this to 1, but you have to stay within the rolled section, the width is 3.5. the stitch selector is on D, the upper looper selector is UP, the blade is engaged and the subsidiary looper is to the right. You can use a decorative thread in the upper looper- Madeira Decor, Superior Threads made for bobbin work, or YLI Pearl Crown Rayon- or use a wooly nylon for excellent coverage and not need to decrease stitch length. I usually don't need to change the length with these threads.

Make sure the u-shaped arm that is on the walking foot is "over" the needle screw i.e. the needle screw should be inside the u shape. The feed dogs need to be up also. Use the SET menu to set the machine for the correct fabric and function.
Is the walking foot new? I had one that I used a lot and it went nutty and had to be replaced. I pulled it apart and could not find anything out of place/worn out/broken but it just did not do the job any more. The new one works great.
