SOURCE: how do I use hickory chips or similar in my BBQ

You will likely need to soak your wood chips for about a hour or so (trial and error based upon your cooking temperatures), make a pouch from a sheet of aluminum foil and make a "pillow" filled with the chips. create a couple slits on the upper side and place below your main cooking rack. You will likely see it begin to puff a short bit later. May also look into a smoker box, available on the market currently. Be sure to review the cautions and suggestions of your owners manual.

Have the chain professionally sharpened (Stihl or Husqvarna) at a saw retailer (take your saw). While there ask them to verify the gauge of the bar and chain are the same. When you return to pick-up your chain bring a few pieces of wood. Ask them to make a few cookies with your saw. Please reply with the result.

SOURCE: I purchased a masterbuilt smoker in Jan/2010 Model

Try this...

I just bought a new Masterbuilt Smoker by default two weeks ago I borrowed a friend’s to smoke about 30lb. of Salmon to then can. Ran the smoker every day for three day. ON my last batch the heating element would not work. Talk about Frustrated! The Smoker was only 2 yrs. old.

Knowing I borrowed I felt I had to replace. So online to Cabelas and I ordered my buddy a new smoker and had it shipped. I then found this website... GOT TO LOVE the internet. I saw many other people had the same problem. Found an Answer...

The Problem was one of the connector to the heating element was poor quality and if you don't clean your smoker on a regular basis. The heat and moister caused the small copper connector to corrode and the wire to come loose. I took a wood chisel and cut off all the rivets on the back. I was then able to pull the back off with no damage and access the small box in the lower back. I found the connector. Went to the hardware store and bought a replacement for .75 cents. A pair of wire crimpers and the problem was fixed. I also bought ½ inch Sheet metal screws to secure the back it was good as new. So I returned the smoker to my buddy and kept the new one. When it arrived I saw Masterbuilt has since fixed the problem and provided an access panel to the element and connectors.

Woods i use for smoking meat

Here's the list of what woods i use; Hickory-
The last hickory I used for smoking is from a tree I cut down that was growing in the woods on the family farm. The trunk was about 8 inches in diameter, so I ended up with a lot of wood to use, and a lot to share.
Mulberry
I've used quite a bit of mulberry wood. It's common here in Southcentral Kansas. I've even have a couple mulberry trees in my yard. Birds spread mulberry trees by eating the berries, then transporting the seeds internally (in their droppings)
Red Oak-
I've used this wood quite a bit, usually when smoking beef briskets and pork ribs. The flavor is not as rich as that of hickory.
White Oak-Another native tree on the farm, these are much smaller than the red oaks. The flavor is similar, but can be a bit harsher than their red cousins. Squirrels and whitetails love the acorns from white oaks.

What are the two different sized pans for and how do you use them in my brinkman smoker?

One probably is fer yer liquid and the other is fer yer hickory wood chips. Both serve to make the smoker an indirect cooker. The hickory wood slowly gets the smoke a rollin intah them smoker and the liquid (a mix of liquid smoke, cheap white wine or H2O) catchs them drippins and bounces em back into the smokey goodness of that thar machine.Yeppers I can smell that meat a smokin right now. What are we cooking? Don't matter; all we want to remember is low and slow baby. Low temps (200f) and slow (6 to 8 hours) Hay we said it was good, not fast LOL.

Char-broil water smoker

first, a charcoal fire in bottom tray, then a pan filled with hot (boiled) water above it, then the meat on top tray, then keep lid on a long time (hours) without peeking and remember to keep charcoal topped off. you should also soak hardwood hickory sticks in water for a day or 2 and wrap in aluminum foil with small holes punched through and place on top of charcoal to provide smoke. usually a large chicken is done in about 4 hours.
