If the bowling alley is perfectly horizontal, the center of gravity of the ball will remain at the same height measured in a fixed system of reference. As you know the gravity force is directed vertically downward. To calculate the elementary work of that force you evaluate the inner product dW= vec(g).differential of vec(5). However since the displacement vector vec(r) remains in a horizontal plane ( Prependicular to the direction of vec(g), and the ball does not bounce and leave the horizontal plane) the angle between vec(g) and vec(r) is equal to 90 degrees. the inner (scalar product is =0).
A simpler way to remember it is that the work is equal to g*(difference in height)
