It is factory set and you have no manual control to override the settings.

Check your programmed temperature setting; perhaps your machine has been set at low or medium.

Following are the instruction for Setting the Temperature from the manual for the ESAM6700.

Setting the Temperature

1. Press the P button to enter the menu;

2. Press the < or > until "Set Temperature" is displayed;

3. Press the OK icon;

4. Turn < or > until the required temperature (high, medium, low) is displayed;

5. Press the OK icon to confirm (or the ESC icon to cancel the operation);

6. Press the button to exit the menu.

For a hotter coffee, before delivery rinse the appliance through by pressing the Rinse icon and confirming with the OK icon. Hot water

flows out of the coffee spouts and heats the internal circuit of the machine so that the coffee delivered will be hotter.

For an even hotter coffee, heat the cups by rinsing them with the hot water.

Coffee not hot right after finishing percolating. But gets hotter with time, about 5 minutes.

My Keurig coffeemaker shuts itself off, sometimes before I even brew a cup of coffee.

This is a heating problem.
What usually happens when heating elements start to go, is that they get thinner. This means that the same energy goes through a thinner wire - so it actually gets hotter than it should (like a fuse).
There will be an over-temperature switch that will cut out (to prevent a fire or damage) - so this is tripping off.
Replace the element with a factory original - and try again.
Check for any blackened connections at the element.

increase the pressure in the boiler with the pressure switch but watch you dont make the pressure go to high or it will blow off

Our coffee tastes very weak. Would de scaling help.

This would not hurt, but I think you just need to add a tablespoon or two more coffee grounds or until it is the strength you want.

Only the heat of the water will give you poor quality, the hotter the water
the more coffee comes out from the grounds.

Coffee not hot enough Is there a way to modify the factory settings to make coffee/milk warmer for the Nespresso Latissima machine?

Before placing first coffee capsule in the machine, run the large espresso cup button into a cup (clear water will come out). This primes the machine and makes for hotter coffee.

The coffee could be hotter

Clean it. Use the manufacturer procedure. If that doesn't work, you can obtain a new thermostatic button. Outlet temp for most coffee makers is 180 F.
