Metadata is the data info about your device and normally picked up by a computer to tell what it is (can be deleted but the file may write back in its place)

Canon G10: clicking properties on camera movie files gives creation time, but after copying to computer, properties only gives copy time, not original creation time. Where did the original time go?

If you use the camera cable or a card reader to get the photos on your computer, the metadata is there. When you copy the same picture the metadata is lost and is replaced by the new data at the time it was copied.

How do I prevent the date and time from being available on the camera data?

The date and time (and a lot more) are stored with every picture in its EXIF metadata. Any photo viewing/editing program should be able to display this data. If you don't want this data attached to the photo, you'll have to use a photo editor capable of altering this metadata. With most programs you won't be able to remove the data completely, but you should be able to set it something like midnight on January 1, 2000.

I want to see all the setting Information I used when I took a photo

If you're viewing the photo on the D60, press cursor-up/down to cycle through the different views of the photo. Those views will show you the various settings.
If you're viewing the photo in Nikon CaptureNX2, select the picture or double-click on it. You'll see the information in the Metadata tab.
If you're viewing the photo in another program, please refer to the documentation for that program. Look under "metadata".

My date is correct on my camera but i can't get it to show up on the picture. I like to use the date on the picture to help me organize my photos in my scrapbook. How do i get it to show up when i print my...

The date is stored in the metadata of the picture - it is not in the image itself. Metadata is the stuff that the camera adds to the digital file for other purposes.
in order to print the date on to a picture you must use some software that will extract the metadata and superimpose it onto the image.

Not sure if understood your question 100% but I'm going to give it a shot. I'm thinking your trying to add metadata to images. This is very easily done actually. My advice would be to use Adobe Bridge to do this. You can add all kinds of metadata to your images one by one, or multipes at the same time. You can also create metadate templates and apply them to 100's of images at once.
Do you have access to Adobe Bridge?
