Depends what you are cooking.

"Time-Saver Roasting: Use this method for the tenderest beef cuts if you're in a time crunch. Roast at 325°F (160°C) for approx. 30 min per lb (500 g) for medium doneness. Tenderloin can be roasted at temperatures up to 400°F (200°C)."

I want to cook a rib roast in the pressure cooker. How long to cook? This is NOT a pot roast!


Please don't! You will ruin the prime roasting joint in a piece of beef rib. If you want to boil meat in a pressure cooker, use Tri-Tip or Topside. Roast uncovered in the oven for 1 hour and 15 minutes. Rest for 15 minutes, remove from the bones and carve. You can roast the bones with BBQ sauce as a snack another day.

At what temperature do you cook bone in and boneless prime rib and how long per pound


13 - 15 minutes per pound @ 300 - 325 degrees F, pull when meat is 125 F - 130 F (internal temp.) for rare to medium-rare. Err on the low side. Allow to rest; the meat will continue to cook while resting. For example, if you cook it to be medium-rare (130ish F), then pull it out of the oven, and let it rest, it will end up being medium to medium-well (140 - 145 F) once cut. So be aware.

Bone-in, bone-out it doesn't really matter, because the bone is not in the center of the meat. It's best to let the prime warm at room temp for a period of time, before cooking. An hour or so from the refrigerator (not frozen).

Some people like to place the prime into a hot (425 F) oven or grill/smoker for 10 -15 minutes, then turn down to roasting temp. This is done to sear the outside, which will give it a crispy/seared outside. This doesn't "lock in" flavor, juices or anything else, it is more of a visual and texture thing. If you do this, the cooking time will be reduced, because the oven/grill will have to come down in temp over a period of time while the meat is cooking. I don't recommend doing this with prime rib. It ends up being overcooked and tough, due to the fast then slow roasting of the meat.

What you want to keep in mind is: roast the meat low and slow. Check the internal temp, with a meat thermometer, early to avoid overcooking. Don't forget the internal temp of the meat will rise after taking it out of the oven. Let it rest for 10 - 15 minutes before slicing the meat.

A lot depends on the oven itself, whether it is fan forced, how well it holds heat etc.

Preheat to 240°C/475°F/ gas 9, place the meat in, and turn down to 200°C/400°F/gas 6. Cook it for about 1 hour, then take it out and place it covered on the serving dish for 15 min. before carving. This first go may need to have slightly modified times for the next roast you cook.

To get a perfect result you really need a meat thermometer

Cooking a 22.8 lb standing rib roast


To have this cooked to a medium will be about 18 mins a pound. Cook a shallow pan at 325 for that amount of time. If you would like a crispy exterior then heat the oven to 450 put in the roast for about 20 mins then reduce heat back t 325 to complete cooking. Before you start rub the entire roast down with equal amounts of salt and pepper. LOTS OF EACH.

I need the farberware rotisserie manual suggested


All Farberware Rotisserie Manuals are available for download at http://openhearth.info. The manual that has the prime rib recipe is http://openhearth.info/450.htm . However, I have tried this recipe, and if cooked according to those instructions, the prime rib will be overdone. I take mine off at a much lower temperature to allow for carry-over cooking. These rotisseries make the BEST prime rib!
