Hoq to cook a blade roast pork in a crockpot


Low and slow. Cook the pork roast looooow and slooooow. Trying to rush this cut of meat just isn't a good idea. Cook the pork roast in a slow cooker for anywhere from 8-10 hours. Brown it before cooking.

Need to fix 200 servings of pork loin which will be cut into 1 inch slices. How can I prepare this in roaster to keep moist and hot until serving


Just so happens I am a trade chef. :>)

This is how I would do it.

The day before
Season with salt and pepper, sear the outside to colour the top. Put in a roaster and roast at 350'F for an hour and a half. Leave to cool and refrigerate.

On the day, slice cold (much easier, and put in a tray with a half inch of water. Cover with foil and heat on the top of the stove for 10 minutes, or in the oven for 30 minutes.

The key to getting 200 served is good prep and lots of help. Do as much stuff as you can the day before, prep and blanch veg, make your gravy, peel your potatoes. On the day, you are finishing off and reheating.

Make sure your plates are hot otherwise as soon as the hot food hits it, you lose 30 degrees of heat. If you are fully plating, have two or 3 teams of platers, lay out 10 plates, and have one person do meat, one does potatoes, one does veg, one does gravy from a jug.

If you are doing table service or butler service, you can tray up in advance and cover with clingfilm and foil. Clingfilm holds the moisture and won't burn at 250 if there is foil as well.

When cooking a pork loin roast in the smoker do you need to marinate it overnight


It is recommended to allow the flavor to soak into the meat for flavor all the way through. I put mine in a plastic container and turn it several time throughout the night before and it turns out juicy and tender.

Hi there.
Most recipies suggest 350 degrees for a pork loiin, approx 25-30 mins per pound. Once you are near the end of the cooking time check the center of the roast with a meat thermometer. It should read 170-180 degrees to make sure it's thoughly cooked.
And don't forget to let it rest, covered for about 15 mins before slicing so the juices re-distribute.

Tenderloin recipe


Here is one I like to use. Marinate in a little veggie oil and honey mustard dressing overnight. Rub it down with Honey Mustard after the marination and sprinkle on a good Pork Rub (purchase at Winn0Dixe or Publix) or make your own. You can Google Pork Rub. Place the loin in your smoker at 225 and use a digital probe in the loin. Cook till 142-145 internal temp. Take off, wrap in foil and then a towel and let stand for 1/2 hour. Slice and enjoy. I hope you like it.
