If the water heater shuts off again unplug the white the sensor plug underneath the thermostat (The black plastic box). Then plug it back in. This sensor plug has a black and white wire going to it and it's possible the plug could have been loose going into the thermostat..

They did the same thing to me a while back, except it was a natural gas heater with lp tank out in the yard, bought it from the gas co who services the tank, found out they ordered a dozen heaters, all of them natural gas. I said to the guy, do these need to be switched over or jetted or something? He says why, I said because it says natural gas only. It worked fine, just smudged black smoke out. He brought out another heater and swapped it out, seems you can't change the burner? Don't make sense. Anyway, I would take it back to the place you got it and say get up the coins, It cost $400 to get the plumber back to hook this thing up!! And we have no hot water. And my shotgun has a hair trigger. I would say it is dangerous enough to get his attention on the matter without going to court. Hope this helps.
