The after touch sensitivity on the Nord Stage EX 88 seems to be very low and I need to press down very hard to make the sound that I want with it. Please help.

You didn't mention if that happens when you play piano, organ or synth as the setting changes you make can affect each differently. Aftertouch can be assigned to different functions. You will need to read Morph Assign also on page 60. Page 33 explains Velocity Sensitivity which is different from Aftertouch. If the Aftertouch is not giving you enough control over a parameter, try using the Wheel or a pedal for that parameter instead.
