I have sent money for Xmas to my nieces and nephews but have not heard from all of them. The checks have been cashed. Do I just stop sending them money?

Either they didn't send it or they sent it to the wrong account - it is far too easy to make a mistake and too difficult or impossible to rectify them - I dislike such transfers intensely and managed to avoid them except once and I don't think I got all my money that was "sent" in two installments. Even worse was the time my electricity supplier (direct debit) emptied my bank account and returned it over several weeks in several installments and provided incredibly complex calculations to prove they had returned it all.
Take cash and pay cash is the best way forward...
You won't be able to prove you didn't have the money without giving your customer sight of your account but if you are comfortable with that then order a statement from your bank, alternatively it would be reasonable to expect the customer to show a statement of his account to prove the payment was sent and to your account. If that is correct the fault is with the bank...
