Bread not rising as it used to, not sure if problem with paddle or...?

just as a hint - there is few thousand breadmaker manufacturers... each of them is making several models... we do not live with you...

how we can help if we do not know what manufacturer and model?!? telepathy is overrated...

now, paddle have nothing to do with rise of the bread, yeast and temperature do! if paddle is mixing the dough - there is no problem with paddle!

buy pack of new yeasts (dry if you use dry, i prefer live ones), then try bake again, if bake is ok, you solved your problem, yeasts were old and enzymes stop working, if there is no change in results with new yeasts, try use same yeasts in different machine, if result is ok in different machine, you heating element is at fault... time for new machine...

you do not need to be super accurate with your baking, allow little play...

my favourite bread:
3.75 cup flour (non-bleached!)
1.75 cup milk (tepid, body temperature)
2 table spoon olive oil or butter
1 teaspoon sugar
1 teaspoon salt
3 sachets dry yeast (21g - 0.7oz) if live yeast - about golfball size

enjoy!

How do I check yeast

Put a teaspoon in some warm water with some sugar and mix. It should bubble after about 5 minutes. If nothing happens the yeast is likely dead. Do you keep your yeast refrigerated after opening? That makes it last longer.

I have an Oster Bread maker model # 4811 and the

If it's heating at all, the element is probably good. If it is cooked partway, but not fully, that could be because it isn't rising. Make sure the dough is the right consistency before baking, as a different flour could have a different moisture content, thus requiring a different amount of water. Make sure there is sugar in the dough for the yeast to "eat" or it will not rise. If all else fails, try other yeast. Your can also test the yeast by proofing it. Put a teaspoon of the yeast in a cup of warm water with a teaspoon of sugar. It should foam and bubble in 5 minutes or so. You can find more detailed directions on testing the yeast by searching "proofing yeast" on a search engine. Good luck.

I misplaced the measurement booklet hence the loaf of bread is coming out horrible beause i dont have the specific measurements to go by ,so i wanted to know if u guys had a booklet to download online ,the...

I have the same model - here is one of the recipes in the booklet. I can send more if needed - just let me know. Also, the recipes on the back of bread flour bags work well with this model.

Traditional White Bread
1.5 pound loaf

1 cup water
2 tablespoons butter or margarine
1 1/2 teaspoons salt
3 cups bread flour
2 tablespoons dry milk
1 tablespoon sugar
2 teaspoons dry yeast

Measure and add liquid ingredients to bread pan.

Measure and add dry ingredients (EXCEPT YEAST) to bread pan.

Use finger to form a well in the flour to pour the yeast. Measure yeast and carefully pour it into the well - keep yeast away from liquid!

Snap pan into breadmaker and close lid.

Press "Select" button to choose Basic setting.

Press "Crust Color" button to choose crust.

Press "Start/Stop" button.
