How to soften harden brown sugar?

There are several methods I've used, depends on what you have on hand and how quickly you need it. If you don't need to use it for a few days you can put it into a sealed container (plastic bag, container with a tight lid, etc.) and place a few apple wedges in with it, let it sit for a few days and it should be softer. You can also use a slice or two of bread instead of the apple.
If you need it quickly then put the brown sugar into a glass container, place a wet piece of paper towel across the top and microwave for about 20 seconds.
To keep it soft you can place a piece of bread on top of the container you put it in and then seal it or you can buy a product like the ones shown here ( soften brown sugar Google Search ) to help keep it fresh.

Soften hard granulated sugar

if it is sugar even water should probably disolve the crystals. A rubbing alcohol might do the trick too. Last if it's not sugar and actually hard water deposits I'd try CLR cleaner.

How to converts grams of white sugar into teaspoons

A volume of white sugar varies in density due to its granularity. One cup = 48 teaspoons of granular sugar weighs roughly 200g, the same volume of powdered sugar weighs 120g only.

Assuming granular sugar, 1g of sugar is equivalent to 48 / 200 = 0.24 teaspoons. If you want to find out how many teaspoons are equivalent to a given mass of sugar in grams, multiply the weight by 0.24. For powdered sugar, 48 / 120 = 0.4 is the proper conversion factor.

For example: 20g of granular sugar is equivalent to 20 x 0.24 = 4.8 teaspoons. 20g of powdered sugar is equivalent to 20 x 0.4 = 8 teaspoons.

Hard candy did not harden

  • Sometimes the boiling sugar and water mixture appears to break just before it reaches a temperature stage. If this happens, take it off the heat immediately and stir it gently. You should be able to get it to recombine. Use a medium-high heat so the syrup cooks relatively quickly.
  • Also, be sure you're using high quality butter - never margarines, which may contain too much water for candy making.
  • If you are in a very humid climate or a rainy one, choose drier days for candy-making. Excess water - which can even come from the air, can also cause butter/sugar syrups to break.
