When I had this experience I cleaned the thread path under the plastic cover. There was a piece of thread caught between the disks.

SOURCE: i have a brother xl

There is a small screw on the bobbin holder. Tighten it SLIGHTLY. This will increase the bobbin tension.

I have a necchi 4575 and when I sew a straight stitch it will sew just fine and then for a few stictches it wil act as if its out of thread but then it will pick uop and sew normal for a few more stiches...

Sounds as though either the hook is out of time to the needle, or you have a bent needle. There are videos on Youtube that deal with sewing machine timing. Try a new needle, and make sure it is installed and seated correctly

I have a Euro-Pro 7500. I can't seem to sew a straight stictch without the thread binding up from the bottom of the material.

Do you mean the thread knots and loops up under or over the fabric? If so it sounds like you need to re-thread. You may have not put the thread into one of the tension wheels correctly. Keep the presser foot up when you do it.

My needle keeps breaking while I'm trying to machine quilt. It also at times will collect the thread on the other side of the quilt which makes me think something is wrong with the bobbin.

Q1.(A) Without realising, you could be 'helping' the material feed.
Q2. (A) Is the thread collecting at the start or during sewing?,,if at the start, make sure threads are clear and hold them out the back of work gently till a few stictches are made.
If during sewing, it could be tension isn't adjusted correctly, experiment.
