Ideally you should keep your chocolate in a cool, dark and dry place so that the chocolate doesn't absorb any external odors. But if chocolate is exposed to hot temperatures it can cause the chocolate to "bloom" which is what causes the gray color you sometimes see on chocolates that have sat around for too long. If you live in a really hot place, you should keep your chocolate in the fridge but in an air-tight container.
