Which way do the wires connect to a 3 tab lighted rocker switch using black white and green wires

Usually the center tab is COM... connect Black Hot wire
Other two tabs are switched... connect Black going to load to either of the tabs.
Connect White neutral to load neutral
Green wire is ground... connect to green ground screw or bare copper.

Test wires to see which is hot and neutral

Your copper, green wire are the ground. I beleave that the white is the power, and the black is your neg. to make sure i would use a wire tester to determen the power. From there white goes to white, black to black, and green to copper. I am not sure on the white/black wire it maybe another power. Look at your instalation manual it should tell you.

You really need a 2-pole timer -- 2 wires in and 2 out. In that case the Black/White from the receptacle goes to the 2 "in" terminals and the 2 red wires from the pump go to the 2 "out" terminals. The WHITE wire from the receptacle goes nowhere - tape it off. The Bare wire from the receptacle goes to the GREEN (ground) wire on the pump.
A single-pole timer can be used, but in that case, you ALWAYS have 110 v on one side of the pump. Not safe, and not code compliant.

Find the Hot wire:
Your switch has 2 wires. One of these wires is Hot, and one goes to load. Disconnect wires from switch. Turn on power. Do not stand on wet surface. Test each wire to bare copper wire. When tester lights up, that is Hot wire. The other wire goes to load.

Connect wires:
Hot wire goes to Black timer wire
Wire to load goes to Red timer wire
White wire connects to white wires that are twisted together
Bare copper wire connects to Green wire from timer

How to connect white wire to white wires that are twisted together.
a) Strip white timer wire so you have 1-1/2 " of bare wire. Stranded wire will wrap around other wires easily.
b) Remove wire nut. DO NOT UNTWIST wires.
c) Hold all whites together so bare copper lines up. Wrap stranded copper around the twisted wire.
d) Replace wire nut, or use larger wire nut. Twist real tight. Do not use tape. You can solder the connection.
e) When done, pull on white time wire to make sure it is held tight. Push whites back into box.

I am assuming this is a large 240 volt water heater and you are asking about the connection at the water heater. First thing is to turn the power to the water heater off at the service panel of disconnect if it has one. You will see three wires that connect to the heater. Normally a white, black, and a ground that is usually green or just a copper wire. On the water heater when you remove the plate on top you will have 2 wires. A red & black or a white & black. You will see a ground screw. Connect the green or copper ground wire to that screw. The 2 wires left you connect either one to either wire. Makes no difference as each wire is carrying 120 volts. When you connect these wires secure them tightly with a wire nut, no wire exposed, and then, with electrical tape, tape them up so as the wire nut cannot come off. Push the wires back into the hole an secure the cover on top.
