Oven gas only on high all the time when I turn the nob nothing happens! It's either on high (max) or off

You need a new thermostat fitting to the oven. This can only be done by a registered gas fitter.

you know the flame is on MAX until it reaches temperature. If the oven is red hot and you turn it down and the flame doesn't decrease, then indeed you do need a new thermostat.

Are flames running the whole time? They could be shutting off and coming back on. Need to sit and watch if they are staying on. Sounds like u have flame going off.

The pilot stays lit the flame shuts off but has a strong gas smell. I have to turn it up but I think it gets to temp , then lowers the flame but the smell is strong

Turn the gas off and call a qualified gas installer. Gas leaks destroy houses and the people in them! Just to dangerous to play with unless qualified.

If I use mygas dryer at the same time I usemy stove the flam decreases

What is going on is that the dryer has a bigger draw on gas. This is not necessarily a problem, but more as the nature of the beast. You can let your gas co. Know, they may can help you with this.

Fireplace will start but shuts off in about 30 seconds

Here's a few things to look for. After you light the pilot and turn on the burner, look at the pilot flame. Is it still a strong blue flame and it is still heating the thermocouple? If the pilot flame is a lazy yellow, it may not be able to keep a good enough flame on the thermocouple to keep it hot. The solution? Turn it all off and let it cool down. Take a can of compressed air, like you use to clean computer keyboards, and using the attached straw, blow out the dust or spider web that's partially blocking your pilot orifice. Where the pilot flame is usually lit, blow right down that flange, as well as through the air hole that is on the side of the pilot assembly. If you do it right, the pilot flame should be a nice and strong blue color. Another thought. Is this a vented or unvented fireplace? If it's vented, make sure it has the oxygen it needs to burn by checking for blocked vents or opening a closed fireplace fume above it.

Pilot turns on but when I switch to turn it on,

When you light the pilot, are you holding it down for 30-60 seconds. When you release the pilot button, does the pilot flame stay lit? Or does it only go out when you turn the knob to on position. Make sure the pilot flame is heating the end of the thermocouple and that it's a strong blue flame, not a lazy yellow pilot flame. Make sure the tip of the thermocouple is not burn't off, which usually happens with lazy yellow pilot flames. Replace thermocouple is nothing else works.
