The exhaust smoke at the top vent of my char broil 30" digital electric smoker reads 245°, but my panelis set at 225°. Can i recalibrate temp settings

Most smoker manufacturers consider a swing of 20 degrees either way acceptably within range, so there's not necessarily a problem there. Remember that your smoker will measure differently depending on where the temp probe is. Heat rises, so it makes sense that it may be hotter at the top, especially if the ambient temperature isn't too cold. Put a cheap oven thermometer on your rack and use that to accurately read the temp where your meat will be.

Why can't we get smoke out of the Mastercraft smoker. We have tried it at 120 no smoke, 130 degrees it smoked for a bit. we have opened up the vents half way & changed to smaller chips. Now what (the...

On Master Craft Smokers, you need to put the wood chip in when you first turn it on. The heating element will be on trying to bring up the temperature and will start burning the wood. Also open the vents all the way to get the element to turn on more often. 130degrees is very low for smoking anything. Most meat needs to be 170 on the inside to be considered done. Try cranking the temp at the beginning and turning it down after that. After the first couple hours the meat should be considered smoked, then it just needs to cook.

Bradley smoker that shuts off for no reason

Yes I have an answer, Rather than whining to the world, why don't you just ask the Bradley company--don't you think they would know? I know first hand they can help and they do care a bunch about their customers. Odds are you have not programmed it correctly or have it plugged in incorrectly (wires switched).

Electric Oven not getting hot enough

Sir, I think the top oelement is for broiling ONLY. It should not turn on when baking. The clicking may be the oven heating up.
How far apart were the oven temp instrument and the digital?
Don't expect them to match...they are inaccurate.

1. Heat water until it boils. Place digital therm in boiling water until it comes up to 212deg. If it is not at 212 in boiling water, record the error.(this gives a rough calibration to the digital)
2 Turn on oven, set to 350 deg, place digital therm on rack. Wait until oven reaches 350 (on stove) and read the digital. Note the difference between the two
