My friend opened her bottled of homebrewed beer and it shot out the bottle like champagne, soaking us all. Why did that happen?


There is always a bit up of pressure as this allows the carbonation to take place. If you put bottles of beer in the fridge after bottling, it helps to relieve some of the pressure. But the real answer lies in the speed that you open the bottles. Do it really really slowly to allow the pressure to slowly release itself.

Do it too fast and you will shoot beer all over the place.

What will happen if I bottle my beer before its fully fermented? Is it dangerous?


It's really important that fermentation is complete before you start the bottling process for the following reasons:

If beer is put in the fridge before fermentation is complete, it will continue to ferment albeit at a very slow rate.

If you then take it out the fridge, active fermentation will re-start.

This could lead to bad beer, burst bottles and even injury, so be really sure that fermentation is finished before you start your bottling.

I seem to have a layer of gunk at the bottom of my beer bottles. Is that Ok? I followed all the instructions very carefully.


Don't worry, it's normal to have sediment at the bottom of the bottle, it's just the yeast that caused the carbonation of the beer. If it's a very thick layer, it's a sign that you should have waited longer for the beer to clear before you bottled it.

Either way, just pour yourself beer into a clean glass and Enjoy!

Is it ok to bottle homebrewed beer in twist off bottles? My friend told me that it will be a problem. Is that true?


I would avoid twist off bottles as it can be hard to get a really good seal on them. The beer might leak from the bottle and you could be left with flat beer which would be a real shame after all that effort making it.

What is skunked beer?


This term is often used to refer to spoiled beer; however this is not the case. Beer becomes skunked when it is unintentionally exposed to a lot of light (specifically UV radiation). Basically what happens is the light causes the hops to break down with other chemicals ultimately creating a substance which produces a very strong and pungent sulfur smell - thus giving it the 'skunked' term.

It is this reason why most bottled beers are manufactured in brown bottles. The beers made in either clear or green bottles are able to avoid skunking by using a hop substitute, known as a tetra-hop.
