Sounds like the clutch plates may be stuck together. Happened to me after a long trip in the rain and bike sat for a few weeks after that. Had to take the cluch discs out and clean them
This sounds like a bad brake booster, that sounds like the hissing is when brake is applied. check the booster . thats why the engine sutters when brakes are applied, the booster starts to leak vacuum, thats where iwould start. good day
What sutters? The scanner sutters? Watch the scanner where the bright light is see if that is suttering, mite have dust on the "home" sensor for the scanner so the scanner motor does not know where the scanner is
Use full auto mode or take out of Aperature priority, you may be shooting with a very small aperature setting and not know it. Also shutter priority can be set to a slow shutter speed.
