might sound stupid but take the cover off the compressor electrics and make sure no plastic is overheating.

How to defost inside shelfs

The best way to defrost is to empty it, unplug it, prop open the doors, and put a fan blowing on it. This could take a day or more. If this has been pretty bad for a long time you might have wet (and frozen) insulation (inside the walls of the freezer where you cannot see it). If so, you should give it an extra day or two to drip out. You might also have a bad or dirty seal around the door. Clean this thoroughly, and inspect it closely to make sure it seals well. Good luck.

Why condensation on out side of my freezer

Hi,
This condition is telling your that your freezer insulation is deteriorated or even leaks causing outside air contact to your freezer. By visual check the leaks, if you found, laminated it by using HVAC insulation like duct tape, PU foam etc. For best is to replace all insulation of your freezer.

Suction line on walkin freezer is sweating from condensor to evaporator above ceiling

The insulation wrap around it needs to be replaced. Thats the black foam stuff around the pipe.

When it gets old it loses its insulation quality and the the humidity condenses on the pipe.

Wrap it well in new insulation ensuring that all seams and openings are taped, and every square inch of pipe is wraped, but not to tightly. (Compressed insulation lowers efficiency)

Sub Zero insulation freezing

These units are pretty much manufactured, then the insulation is inserted as a liquid that forms into a solid insulation. Consider the age of the unit for a replacement IMHO.
