Question about i-mate JAM Pocket PC

I prepared Plum Jam 3 days ago and did not set, followed by how to repair on Pectin package and still no good, I have 21 jars of runny jam please help, I do not want to discard all of it, Thank yoy Marianne

Hi

If the jam has failed to set there is no other option than to reprocess it. You will have to empty it all from that batch back into your pot and start over again. There is no other method of forcing it to set unfortunately. The key here often is that the mixture must get to a rolling boil--where the mixture keeps bubbling regardless of whether you are stirring or not. Only then should you quickly add the entire contents of the pectin powder packet. You might choose to add a tbs of butter or margarine also and keep stirring for one more minute after you have added these last items - then turn off the heat. The hot liquid jam should be ladled into the glass jars and then immediately seal the jars with lids and rings seals - the seal is a key to the setting process in the first 24 hours. Do not place them in the refrigerator but leave them on the counter to set. Do not disturb them during the 24 hours and this is important. If the process is successful the jam should be set in 24 hours and can then be refrigerated. Hope this helps. Please remember to rate my answer. Many Thanks.

Jam to runny fruit going to the top


Not enough sugar.
Too much liquid.
Not boiled long enough.
Not enough Pectin in the fruit, so you need to add it.

Fruit will always float to the top. Strawberry jam suffers with this a lot.

You can fix by re-boiling and adding pectin.

My watermeleon preserve started getting mouldy on the top not sumerge in the syrup.How do i safe it?


First of all, your question is posted under Motorcycle Protective Gear. Secondly, if your preserves have mold on them, throw them away to avoid serious food poisoning. Next time you try making watermelon preserves, make sure your jars are sterile before filling, add a little lemon juice and possibly some pectin to the preserves, and fully immerse the jars in the hot water bath.

My huckelberry/raspberry cooked jam did not setup on a couple of batches using pectin. can i reprosses it again by adding more pectin?

Just made a batch of boysenberry jam (first attempt) and I think I may have boiled it too long as it's really chewy.


That's the usual issue- although I find it could have been too much pectin. Try halving the pectin you used with the first batch. Boysenberries IIRC are rather heavy on natural pectin

I made blackberry jam and added pectin. the jam has set too hard and has a gelatenous texture.is there any way to rescue it ???


i like making blackberry jam! and apple jelly and chutneys!

try putting back in saucepan, heating up gently till fluid and adding a bit of water. may work.
i use jam sugar n myself as correct amount of pectin is present
