My white mountain ice cream maker spins the whole cannister

My white mountain ice cream maker spins the whole metal canister. Is that normal? I thought just the inside mixer would turn.

SOURCE: Motor does not stop

If you check the instructions that come with the white mountain ice cream maker, they talk about the problem of the custard not freezing in the center. It is because you have your salt to ice ratio out of whack. Too much salt causes a situation similar to your description. You want to shoot for 12 degrees and if you add too much salt, it goes lower than that.

There are copies of the original instructions online (usually in a pdf file format) that are worth looking for and reading. Rule of thumb 1 to 5 ratio of salt to ice.

SOURCE: Why won't the freezer freeze the ice cream? It

According to White Mountain, this happens because the ice brine gets too cold. The procedure they recommend is as follows:
After you put your cream can in the tub and attach your crank or motor, fill the tub with ice and run for two minutes to cool the cream can. Then, put two cups of rock salt on top of the ice and let it continue to crank. After the ice level has dropped 2-3 inches, put more ice on top and another two cups of rock salt and let it continue to crank until the ice cream is done.

Why won't the freezer freeze the ice cream? It freezes around the outside of the cannister only.

My ice cream churn just spins the lid and does not turn the canister. The only thing that is different is that the lid does not seem to come to a halt when I place it on the cannister and turn it. There...

maybe you have a super strong husband who tried a little too hard to loosen the lid once and now it won't seal or catch. if he is equally smart as strong maybe he could get some sort of gasket type idea going with the lid or something else ingenious. but it sounds like that might not be up his ally as much as throwing it across the room. could you try buying a new lid since everything else is working well? maybe the lord is telling you to get more iron in your diet and less ice cream? ha!

Metal shavings in ice cream

Sounds like the center rest in the bucket might be worn or gone and letting the cannister ride too low in the bucket.

The motor runs but it will not turn the dasher.

dasher is supposed to be statioary so it can scrape off the frozen mix as the cannister turns. That is the secret to mixing the frozen mix into the unfrozen part to thicken the mix in the can. It pushes the frozen part toward the middle as it scrapes it.

Need replacement can for Sterling Catalog No. 165A (Is Rival 8550x Equivalent?)

Richmond Cedarworks has folded. Rival/White Mountain do not have parts for the replacement of your canisters. Richmond has went under for bankrupcy or were bought out by some private sector. The parts offered by Rival/White Mountain are different sized for all of the Richmond products. As there are no parts available, anyone looking for parts should be directed to either commercial supply stores or stores that repair/rebuild old kitchen equipment.

Ultrex ice cream machine

Put the metal canister into the freezer overnight. This replaces the ice and salt in the old bucket style ice makers. After the canister is frozen use any ice cream, yogurt, or sherbet reciepe. Ben and Jerry's have a good website for receipes.
