Not a job for diy
get it professionally done by people familiar with caravan construction or you could wind up with a failure of the van when travelling

Fan mode only, you can control low/med/high speed. In dry mode with low fan, it cut in and off air-con for five minutes frequently.

Please understand first, air conditioning system not only cooling the area but also removing the heat. If heat in the room stays constantly, even 24 hrs running a/c couldn't cool the room.
Now, why the a/c could not cool the room or remove the heat from the room.
Check air filter, evaporator coil and blower wheel for clean. If not service the unit immediately. And also check indoor fan motor rpm. If rpm is low, replace fan capacitor. Check for gas pressure to confirm no leak or running with short of gas. It's advisable to service both indoor and out door once in 6 months at least. Otherwise, your electric bill will kill you lot. Thanks.

I have a R410A Inverter Split system that has stooped suddenly and is now displaying E1, what does this mean/ Thanks Lorena

Not 100% sure but an E1 error on a unit which is sourced from the same place as Electrolux air cons, means that the pipe sensor on the indoor unit has failed. You will need to confirm this with Electrolux. They carry a 5 year warranty, so you may be in luck.... hopefully

Need to change from cooling to heating for a Kelvinator KSR27G split sys air con. Have tried ourselves using the remote, but we feel it is not operating correctly. No manual came with it when we purchased...

The cooling symbol on the remote is generally an "icicle" , the heating is a symbol of a blazing sun. Make sure you have selected the right mode. Also check the filters... if they are dirty, you wont get decent heating from any air con.. cheers,

BTW, I believe that electrolux have a site you can download instruction books.

Not cold enough

An air con unit of any make should never need to be regassed if initially installed correctly. If it needs regassing, there must be a leak. You would have to find the leak and repair it before regassing, or it would be the same as pumping a tyre with a slow puncture. Generally most simplex systems use around 750 to 800grams.
