Can you tell me how this ice cream machine works

The basic old style ice cream maker worked by putting the ice cream ingredients inside the center container and the motor device on top turns the spatulas inside to mix it up. Then you put ice and water and salt in the outer bucket. The ice and salt make it very cold so the ice cream freezes as it churns. Some newer devices, just have a mixer and you put the whole thing in your freezer to make it freeze.

I have a sterling ice cream freezer the can has rust spoy-ts in it can i get a new can

Is there a Ace Hardware store in your area? If anyone can get you a replacement (aside from the manufacturer) it will be Ace.

These rust spots ... outside or inside? If outside ... use the can as is.

Rust in can of my RCW ice cream freezer model 71

If you use Comet or Ajax on a sponge and scrub hard, most or all of the rust should come off. If there is any rust left behind after scrubbing for 30 seconds, it will probably not interfere with the quality of the ice cream. To prevent further rust, dry the container and apply a little food grade mineral oil available at CVS.

Not setting / freezing - bowl in freezer 24 hours *

The ice cream mix has to be xconstantly stir in a nrine solution, That's why they have motorized ice cream makers that rotate the can surrounded by ice and salt.(brine) while a paddle inside stirs it. Good luck and enjoy.

Ice cream not firm

The freezer bowl is sensitive. Go ahead and thaw it out until you can hear the liquid swishing around inside - usually letting warm water run through it is sufficient for thawing. Then refreeze the bowl, making sure the bowl is sitting flat/level in the freezer. When making ice cream with this unit, letting the freezer bowl sit out for even 20 minutes can unfreeze it enough so that you only get sludge. Do not remove the freezer bowl until you are immediately ready to pour the ingedients into the bowl. You can even pre-chill your ingredients by letting the ingredients sit in the freezer for about 15 minutes - although I have found that this usually has the opposite effect of what you have just experienced --> the ingredients usually freeze up so fast that the mixing paddle is no longer able to turn.

Good luck!

Need replacement can for Sterling Catalog No. 165A (Is Rival 8550x Equivalent?)

Richmond Cedarworks has folded. Rival/White Mountain do not have parts for the replacement of your canisters. Richmond has went under for bankrupcy or were bought out by some private sector. The parts offered by Rival/White Mountain are different sized for all of the Richmond products. As there are no parts available, anyone looking for parts should be directed to either commercial supply stores or stores that repair/rebuild old kitchen equipment.

Ultrex ice cream machine

Put the metal canister into the freezer overnight. This replaces the ice and salt in the old bucket style ice makers. After the canister is frozen use any ice cream, yogurt, or sherbet reciepe. Ben and Jerry's have a good website for receipes.

Motor does not stop

If you check the instructions that come with the white mountain ice cream maker, they talk about the problem of the custard not freezing in the center. It is because you have your salt to ice ratio out of whack. Too much salt causes a situation similar to your description. You want to shoot for 12 degrees and if you add too much salt, it goes lower than that.

There are copies of the original instructions online (usually in a pdf file format) that are worth looking for and reading. Rule of thumb 1 to 5 ratio of salt to ice.
