That indicates that the engine is on the point of overheating
when the engine is turned off the water is no longer circulating around the cylinder walls and head and the heat from those items makes it boil off hence the gurgle

    find the reason for the overheating
    if it has electric fans check that they are running
    if it has viscous fan hub (fan clutch) replace it
    have a compression test done to check for head gasket/cracked head
    have the radiator flow tested
    check the condition of the fins of the radiator
    check coolant level

Gurgling sound in the cab

Well yes and no. The gurgling sound is air in the cooling system moving thru the heater core. The cooling system is not full of liquid coolant.
As for the cause of the coolant loss, if you fix the external leak and you continue to loose coolant, the head gasket could also be leaking.

My 2005 Grand Prix makes gurgle noise from dash area

Your heater core is leaking its located under the glove box. If you hear it soon you will have a small wet spot. It probably just losing air for now but it sounds like a water bottle gurgling. Better to get it taken in before it goes out completely when you need it.

2005 Lincoln Town Car has a gurgling noise under dash when car is idling & when you shut it off. Form dealer told me this is normal. I don't believe it is.

Sometimes a VERY slight hiss is audible after using the ac. But a gurgling is not normal and usually a sign that there is air in the cooling system. The noise is the air "gurgling" through the heater core. I'd almost bet money that's the problem.

When the van is started i hear a gurgling noise like water running across the front of dash. At time after the van is driven and hot you can smell coolant smell under hood.

You have a coolant leak somewhere on your motor. Your coolant is low and you are hearing the air pocket being pushed through the system.

Is it low in water?You have a heater control valve on that side . Your heater hoses connects to it to let hot water in the car when the heater is turned on. Check and make sure the passenger floor is dry. If it is wet you will need a heater core
