I have re-categorized your question as I am guessing it is nothing to do with fax machines. Let me know if this is incorrect?

For fresh coriander, (cilantro) you can use Italian flat leaf parsley although the taste is different, it is green and will enhance the dish. For ground coriander seed you can use garam masala.

I am a chef with 45 years experience and would be happy to answer any of your culinary questions.

Can the preposition 'with' follow the verb 'substitute'?

At first I did not think so, but after checking The book Prepositions and Adverbial Particles by J. B. Heaton, Longman, 1965, I found substitute with, substitute by meaning substitute a person or something with another person or thing. The other preposition that follows the verb in question is for.

Can you put mango in a cous cous salad? I really like the idea but it sounds a bit weird.

It's totally fine to stick mango in a cous cous salad. I do it all the time. Try throwing in some chilli and plenty of parsley and coriander. Just make sure that your mango isn't over ripe or it will make the cous cous mushy.

Tape cannot be removed

However, any cameras in which you can insert a video tape (camcorders,...) will NOT work with coriander. These cameras record compressed DV video on the tape, while the IIDC specify uncompressed, on-the-fly video flows. If you wish to use a camcorder you should have a look at Kino instead.
