Question about Viking 500 Series VGBQ53002RELSS 30" Built-in Gas Grill with 563 sq. in. Cooking Area, 2 Stainless Steel 29,000 BTU Burners, 15,000 BTU Infrared Rotisserie, Smoker Box and Blue LED Controls: Liquid Propane
This may simply be a matter of having turned the gas tank on too fast. The hose/regulator that connects to the tank has an excess flow valve built into it. Close the tank valve and disconnect the hose/regulator from the tank, then reconnect it. Now slowly turn the handle on the LP tank. See if that solves your problem.

If this burner has tube type, You can loosen a screw in the front of burner and slide open air rater vent just a little just make sure not to open to far. blue-ish/orange flame is what your looking for
