I have a Dorel convertible car seat with a drop down protector / arm rest, hoiw do I remove that drop down to convert it to a booster?

I called Cosco at 1-800-544-1108 with my model number and manufacture date and they were happy to email the instructions to me in PDF format. I assume they would have sent them US Postal if I'd asked.

on the back of the car seat you will find a clip that looks like a sideways H. One side of the clip cannot be undone, but the otherside does undo, what you do is indo it and the straps come right out andmake sure to make note of how they come undone so you know for future references. as well as the **** clip, turn the seat upside down and the bracket that is attached to it fits through the slot. And just like that it is into a booster seat...

Take the base off if it has one, either clips, screws, or a metal rod holding it on. Take the belts out. They should slide off the clip at the back of the seat, then unthread belts from buckles. The buckle/strap between the legs usually has a metal keeper below the seat. To remove you need to bend/twist the keeper until you can push it UP through the seat and remove the belt/strap. It is now a booster seat for use with a lap/shoulder belt in the car. Store all the parts you removed in a ziploc bag for when your child outgrows it so it can be reused.

How do I remove the head rest to convert this car seat to a booster? The back plate and the head rest are connected and held on by a metal bar on the back of the car seat.

This car seat does not convert to a booster. It becomes a "Belt-positioning booster". The back and headrest remain while using as a booster. You remove the 5-point harness and use the car's shoulder strap seat belt.
The belt positioning is done by the plastic parts at the top on either side of the seat.

How to convert to booster

After heavy digging, I found the instruction manual for my Alpha Omega Elite 3-in-1 Car Seat #22-755-MAC and scanned it. How do I put back together the straps on my car seat

would assume you're talking like a booster seat with the back just no 5pt harness. You just buckle them up like you do. If they have those arm rest looking things, the part where it buckels goes under that one arm rest and the shoulder strap should go resting over his shoulder like yours. Some of them have a loop up top for the shoulder strap to go through. Just make sure that the toddler does NOT put their arm over the shoulder part of the belt. If you get into an accident this could break his/her ribs.
