When using the oven at, let's say 350 degrees, it will be cooking fine then sometimes the oven goes off, oven light included, then we have to shut everything off ,wait for 15-20 minutes for things to cool...

This indicates a open/shorted oven temperature sensor and to solve this problem the sensor needs replacement. If you wan to be sure before replacing the sensor then you can test it with a voltmeter for around 1100ohms....if it reads more then this then it needs replacement however, if the reading is around or less then 1100ohms then it is the control board that needs replacement. Oven overheating


Set the oven thermostat to 100 degrees ( very low heat) and wait to see if the onen indicator goes off. If it doesn't then the oven thermostat may be faulty. If you have an oven thermometer, then use that to check the oven temperature.

Gets hot too quickly food cooks too quickly


no oven heats to what the dial says, all are to hot or to cold. try reducing the cooking temperature by 50 *, so instead of cooking a roast at 350, set at 300. i have never seen a stove that is heating to the temperature of the setting.

This is an electric convection oven


I am by no means an expert, but I believe the only thing differenty in a convection oven vs a regular oven is that there is a fan to conduct the heat quicker and more evenly. It has to do with heat tranfer rate. I can't imagine why aluminum foil would cause any problem.
