Stainless steel comes in various grades for different applications
most stainless for general applications is the lowest grade ( in you case for hygienic reasons) up to salt grade or chemical grade which is the highest
stainless steel is just ordinary steel with high contents of chrome and nickel so the lower grades are predominately steel ( rust prone)

Stainless steel does rust... titanium doesn't. You should wash and promptly dry the cutter blades with a cloth after each use to prevent rust which will dull the blades must faster. (Pleasure boats use stainless steel bolts and fittings throughout, and they are always slightly corroded.)

I cannot remove the blade. Is there something else I should be doing besides just trying to pull it out.

They are a right sausage to get off. I work on Kitchen Aid processors and I have a smallish link chain (welded links not those ones with a gap) that I wrap a couple of turns around the middle of the blade shaft and shackle it on then attach the other end to my work bench and wang it away from the bench in a straight line from attachment point. The chain has no give in it at all, generally the blade will come off after a couple of those shocks. The hardest part is getting the chain tight enough so it won't slip off. I sometimes use a stainless steel hose clamp (automotive) to secure it. Replacement of the blade and the motor shaft sleeve is essential unless you want blade removal to become a regular chore.

Can't remove the container from the motor housing

It will be the blade holding the bowl on. The blade has become locked onto the motor shaft, in the end you are going to need to replace both. Take it to a K/A service agent.

I need to know how to remove the blade of an Electr-O-Matic 1025V-1 food slicer (made by Rival of Kansas City -- stainless steel).

On the opposite side of the blade, unscrew the knob until it comes off. It may be on there pretty tight.
