Check the door switch: The door switch is responsible for turning the light on and off when you open and close the door. Disconnecting the switch, as you have already done, can confirm if the switch is working correctly or not. If it still remains at half brightness, the switch may need to be replaced.
Check the light circuit: If the switch appears to be working correctly, there may be a problem with the light circuit. This could be a problem with the wiring or the bulb itself. You can try replacing the bulb to see if that resolves the issue.
It is just a standard Small Edison Screw (SES) appliance bulb. There is normally a removable cover on the exterior of the cabinet right behind where you can see the bulb on the inside. Remove the cover, unscrew the old bulb, install the new, replace the cover.

Generally you should be able to do this. Be sure the LED bulb is similar or smaller shape so there are no interference problems after installing it. You should get a similar watt equivalent LED .... unless you want to go brighter or dimmer. And you usually get to choose whether you want "warm" light LED (~3000K) or "cold" light LED (~4000K). The warm light LEDs are closer to incandescent and the cold ones give off light more like a fluorescent bulb.
If there is other equipment in the car such as a high power amplifier or audio system, disconnect and see if it charges. Also check voltage on battery when you think you are at full charge. You may have a damaged cell inside the battery. Voltage should be around 12.8 to 13V dc.
