I cut open a cantalope and the meat wasn't soft. i do i ripen it quickly?

It may be too late now that you've cut it, but put it in a paper bag with a ripe banana and seal the bag for a few days. Since it's open, you'll want to keep the bag in the fridge. The gasses from the banana may ripen the melon, depending on how unripe it is.

Ripen cut cantaloupe

Not once it is cut. To test before cutting press the ends or smell the fruit, it should smell sweet. To ripen. put in a paper bag with a ripe banana as they give off ethylene gas which is a ripener. Also works on tomatoes.

I have 4 tomato plants that are full of large green tomatoes but they will not turn red. What can I do to get them to ripen?

Grant, an interesting problem. Not knowing the environment, I searched for methods to force-ripen tomatoes; this site looks promising:

http://homeguides.sfgate.com/force-tomatoes-ripen-64525.html

If it's just too cold, the tomatoes won't ripen on their own. The above site advocates picking the tomatoes and bringing them inside to ripen, among several other potential solutions.

There are also recipies you can try with green tomatoes (other than frying). After the first frost of the season, I made a tomato chutney that was excellent following this instructable:

What can I do to make sure the apples I buy stay fresh

In order to keep your apples fresh and preventing them from ripening, keep them in the refrigerator. Apples that are left out in the counter can ripen in just few days. If you want to keep your apples fresh for a very long time (few months and more), you can wrap them in a newspaper before putting them in the refrigerator.
