There has been a quiet resurgence in frying with lard. It remains highly saturated, however, and prepared foods might taste a bit like bacon. It can even pop corn in a professional kettle, but may leave tiny specks of scorched pork on the popcorn. There is a way to deodorize lard. It may be by boiling in a kettle of water, to which a little white vinegar has been added. Chill and scoop the resolidified fat off the top. Reheat on low heat to evaporate excess moisture; pour into molds. Keep refrigerated.

The page says as a general rule, choose oils with a high smoke point and avoid flavored oils, peanut oil adds a nutty flavor to food olive oil has a low smoke point lard and walnut oil not sure. To me looks like a recommendation a foolish one but that's all they are stating honestly think vegitabkd oil is way to over powering and makes fried foods taste bad

I need instructions for using my buttermatic II 4 qt popper. How much oil and popcorn do I use? When do I put the popcorn in (at the same time as the oil)?

I have one with the instructions. Its 1/4 vegetable oil and 1/2 or 2/3 cup popcorn. It says not to exceed 1/4 oil and not to use butter, margarine, or lard because it can smoke. It also says if using gormet popcorn, only use 1/2 cup to prevent cover from lifting. Hope this helps. :)

What kind of oil (vegtable or corn oil )

Hi!

Please use blended vegetable oil, pure corn oil, sunflower oil,
soybean oil or grapeseed (canola oil) because these oils have a high
smoke point. Peanut oil is not recommended because it greatly
impacts the flavor.

• Oils should never be mixed when deep frying.
• High heat, water, and burnt food particles break down the oil’s smoke
point.
• Replace oil if you notice:
- Excessive smoking at normal temperatures
- Strong oil discoloration
- A rancid smell
- Excessive foaming around the frying food
