That can be dangerous. Do not do it alone and what should it be set at. If you cannot answer that then do not do it. Otherwise you raise the temperature until it cuts our, if the oil goes more then 10 above it is bad. Be sure you are not alone when doing this.

Our Pitco Frailator deep fryer boils over randomly. Is it the High limit sensor or the thermostat?

Ask service department direct. I answered this earlier. It isn't heat related. If it was heat, all your food would be burnt. Old oil boils over, so it is the oil, or what you are frying is too wet or releasing steam part way through cooking. Palm oil, the thick white stuff is particularly bad. I used 'Prep Ultra'. I have been a trade chef for 50 years, and now retired. I can smell dirty fryer oil from 10 feet and have sent fries back in the past with the question "ask chef when was the last time the oil was changed. If he says yesterday, ask him to put some in a white bowl and bring it to me".

To test, jump the two leads on the high limit. However, this sounds most like a faulty gas valve. Most high limits are designed to cut off both the pilot and the main buner.

What are most common problems found with pitco frialator fryers?

Some of the most common problems with Pitco fryers is failed Hi-Limit thermostats, carbon build up on burner tubes, and dirty or clogged burners. This hi-limit thermostat is mounted inside the fry tank on one of the burners. Often the cappillary tubes are damaged or broken during cleaning causing the limit to fail. The hi-limit is the most common part I replace on Pitco fryers. The other common items are self explanitory. Keep the fryer clean in all areas, including burners and tubes. You will see the repair man less often.

Fryer was working before being cleaned but a cook started it up without the oil now nothing will work?

Hopefully it has kicked out on high limit thermostat. It depends a lot ofn what type of control you have on your fryer. If they are all mechanical controls, the high limit may need to be reset. Open the front door of the fryer. There are two thermostat bulbs in the fryer. One goes to the thermostat with the temperature dial, the other to the high limit thermostat. Hopefully the high limit thermostat that you have will have a small red button sticking out. Push that button in and then relight the pilot as you would normally do. If your high limit thermostat does not have a red button it is an automatic reset high limit. When the fryer pot cools below 300 degrees it should reset itself. If you have electronic computer controls on your fryer you will have to reprogram your thermostat settings.

Pitco Frialator SF14 pilot will light and the burners will light but within an hour it completely shuts off (pilot and burners). The high limit and thermostat have been changed 1 month ago.

Check the hi limit sensing bulb, it should not touch the fire tube, when it does, it will sense high temperature which will trip its mechanical contacts and will shut pilot and burner flames.
Make also sure that the thermopile is free of soot or any form of dirt and is properly heated by the pilot flame.

550 degrees and shuting down

Replace the thermostat. If it's really getting to 550F without shutting off the pilot and main burner, or the electric in an electric fryer, by tripping the high limit, replace the high limit as well. The high limit should shut off all the gas or electric at about 425F.

I put it on any temp and it heats to 550 degrees

Replace the thermostat, P5047588. If the fryer is not shutting off, both main burner and pilot, when it overheats, also replace the high limit PP10084. The high limit usually shuts the fryer off at about 425-450F. Check your thermometer. A fryer should never get up to 550F.

It shuts down because it is tripping the high limit. Apply a soap solution to the lines going from the gas valve to the thermostat. If bubbles appear there is a leak and needs to be corrected. If no bubbles appear then the thermostat is probably your problem.

Pilot wont stay lit

If it will not stay lit from a cold start, you will need a thermopile. You can check it if you have a DC meter that will test milivolts. It should be putting out between 300 and 500. If it will not stay lit after the pot gets hot, you will most likely need a high limit. Try pushing the red button below the thermostat. This will reset the high limit.
