Question about Hoshizaki KM-630M Crescent Cuber Ice Maker
Came into work and noticed the 3 beep alarm sequence. Everything I've read said to reset and wash before trouble shooting the problem. So I reset, but now I cant get the wash cycle to kick in.. If I switch it to wash, nothing happens at all. If I switch to on, the water starts to run, but nothing freezes. I'm almost certain that all it needs is a good cleaning, any suggestions as to how I can get the wash cycle to do it's thing?
3 beeps, Freeze Timer, not freezing. Obviously as you said, the water just runs. Problem may be the refrigerant gas has leaked out and the compressor wont run without gas due to a pressure switch. If it leaked overnight, it must have left oil residual stains where it leaked out. Could be copper wore thru where two lines rub against each other, I had this problem on a thin 1/8" line to the pressure switch.
Other cause for the three beeps is the float switch is stuck. Try tapping on it and check for water fill for it to sense, remove it and dip it in LCR or Lime Away , equivalent Hoshizaki recommended. Try freeing the switch or even bypass it if you know electrical.
The water valve should not leak thru, you mentioned the compressor never starts up?
The cleanning cycle, there is a micro switch mounted to the valve, this switch may not be working right and will not let the unit run, as a probable cause.
Bottom line is I think your gas leaked out or the float switch is stuck, and the manual water valve position sensor switch is bad.

first try resetting the board by pushing the reset button on the board. But make note of the number of the beeps before resetting.
