There are spark (iginition) testers available, but the simplest way is to do what you are doing, plus a step. If you aren't grounding out the bottom "L" shaped part of the spark plug to a metal part of the engine, then you won't get any spark. So, here you go...
1. Remove spark plug.
2. Attach spark plug to wire.
3. Ground spark plug to metal (place the "L" on the engine block, etc... make sure no paint is in the way, it needs metal to metal contact.
4. Keep plug grounded and have a buddy crank the starter. That way you can really get a good look at the plug.

When it shuts down crack the fuel cap and listen for the woosh of a vacuum on the fuel tank. If you hear this, clean the pinhole vent in the fuel cap, or replace it. Being partially plugged would cause you to be starved for fuel and could explain your issue, and why it goes away after a period of time.

That is a fuel problem caused by stale gas you will need to remove and clean the carb with carb cleaner.

I have a Gx 345. Had a very similar diagnostic issue. Make sure you have a fresh set of plugs and have checked wires for abrasion. The best way to see, if you have a grounding out issue is to start tractor in the night and look for sparking on each side of engine.
Anyhow, after replacing ignition circuit board, the problem was corrected. Coils fail very rarly, if failed they simply don't work. Typically, an intermittant problem would point to circuitry or grounding issues.
