I have managed to resolve the problem at work, there seems to be no solution anywhere and even HP claim it is not designed for the job, but here's the fix:
Assuming the computer is already connected to the printer, download the Firmware update from:

Run the application, select the printer and update it.
Go to Control Panel and open Scanners and Cameras.
In the "Additional Tasks" bar on the left, select the option to enable network scanning - this allows the port or service through the Windows Firewall.
Have the CD to hand and the printer DISCONNECTED from USB.
Install the software, doing a COMPLETE installation.
When prompted, select NETWORK, follow the instructions and enter your device's HostName (If on DHCP), IP or MAC address.
When prompted (It'll say that even though it's being installed over the network, it has to be connected locally), connect the USB cable.
The software will install, the you'll be asked to restart.
Restart.
Once logged on again, it'll send a test page and ask you to register (select no, don't remind me) and set-up your faxing (If you wish to). Windows may attempt to install the device - just click cancel, as we will now DISCONNECT the USB cable.
Go to Control Panel > Scanners and Cameras (You can right-click and drag a shortcut to this location to your desktop) Your scanner should now be visible.
Open the scanner and click "Preview Scan".
That'll be it!
