From 60 mph upwards the temperature gauge heads to the red and then drops back. Since the engine temperature sensor is sited between pots 2 & 3 and runs with one of the HT leads could this be caused by the HT frequency at these speeds. If so how do I fix preferably without replacing HT or sensor leads?
If you think it is a frequency problem (very good chance it is) first check all of your grounds, insure they have a good connection especially if there is any braided ground straps. Second check all wires that may have been twisted together running to any electrical components. Twisted pairs (wires) and braided grounds will cancel out frequencies that can cause problems like you discribe.

Check and see if the EGR valve is leaking, to check this spray water on it at idle, if the water steams off the valve is leaking and is the source of your problem, also are you sure you hooked the new DPFE sensor up right? re-check it..

is it your impeller, got a ford st24 and had the same problem,could only drive a short way before it got too hot again but the felt cold.

it may be a defective O2 sensor here is th difinition:
P0133 - Heated Oxygen Sensor (HO2S) Slow Response Bank 1 Sensor 1 , this is the sensor on the side of the engine that #1 cylinder is on, it is the sensor before the cat.

With the sensor unplugged and the fan works,, replace the new sensor,,,,, it is probably defective. I have seeh this before.

It's normal for the cat to get hot - given they've replaced everything (just about) that could cause your problem - they have not looked at the injectors and O2 sensors. If you had something burning in the engine bay it was most likely electrical and you should look for burnt wires. You probably have a short in the ignition system or fuel injector wire harness. It's nearly impossible to diag a problem like this without having the car first hand. It must be throwing check engine light codes. Get the codes and post them. Also try a different shop at this point.
