Must water be in the pan everytime I use the smoker, or is that just on certain kinds of foods?

if you just bought it I would contact the company and request they send you one . if you do not mind really dry smoked food then possibly not .

Can I use the wood chip pan directly (not the side chute)?


It is a big process it has 7 steps they are as follows

    Soak hardwood chips in water for at least 30 minutes and up to 2 hours for larger chunks. Drain them completely before adding to the smoker unit. Use 1 1/2 cups of wood chips when smoking for less than 3 hours. For longer cooking times use 3 cups of wood.

  • 2

    Place the bottom unit that contains the heating element on a sturdy surface, away from flammable materials. Make a foil pouch containing the wood chips and punch a few holes in the top. Place this pouch onto the pan containing the heating element. The chips can be added directly to the pan, but the foil pouch makes cleanup easier.

  • Place the large water pan onto the unit and fill it 2/3 full of water or apple juice. The water or juice will moderate the temperature and provide moisture for the cooking food.

  • 4

    Add the cooking grates to the top of the unit and close the lid to allow the unit to preheat.

    Place the food on the preheated grates and cook until done. Keep the lid closed as much as possible to maintain the heat. Open the vent on the top of the lid to allow the smoke to escape.

    Check the water level occasionally by opening the door on the side of the Charbroil Electric Smoker unit. Add more water as needed.

    Add more soaked wood chips after a few hours if the smoke begins to die away. This is optional; the chips provide flavor but are not necessary for cooking the meat.

    How many hours do you you season the smoker initially before putting food items in it? do you put water in the pan for the initial smoke? and how many hours will it take to smoke a turkey?


    It takes three hours on medium setting to season the smoker. During the last 3/4 hour of seasoning, add 1 cup of wood chips to the wood chip box. Let the chips soak in water for a half hour prior to using them. Once three hours is up, turn off, unplug and let the unit cool off.

    Most of the small vertical smokers will contain, a charcoal pan, a water pan, and grills. That is about it for internal parts. The charcoal pan goes on the bottom and the water pan will go above that and then the grills. I hope this helps.

    Ah yes, the joys of learning to how to smoke food. I love smoked food and I have built my own smoker. You will really enjoy it once you learn the in's and out's. Many web forums available to you to learn from also.

    Your answer is, you use a water pan in a smoker to keep moisture in the cook chamber. Low and slow is the key. Low temperatures for a long period of time. Ideally, 225 is a good temp. You can fill the water tray with 2/3 water and/or any marinate mix you wish to impart into the meat. I usually just fill 2/3 with water and then pour in whatever marinate I have left also. Keep an eye on your water pan and refill as necessary during your cook. Good luck and good eating.

    I have a water smoke and don't know how to use it


    The quick and short story is, fill the charcoal pan about 1/2 to 2/3 full of charcoal. Fill the water pan about 2/3 full of water and I add beer or whatever marinate I have left over. Spray PAM of similar item on your grills. Get the charcoal going, you need to try to regulate the temperature for 225 and maintain it for 4-6 hours depending on what you are cooking. You will need to reload the charcoal as needed to maintain the cook through out the period needed. I would start of with a couple whole chickens and put a digital thermometer in the breast. Cook till the breast reaches 170-175 and remove. Place soaked wood chips or chunks on top of the charcoal during the cook. The first hour it is important to keep some wood in there to get that smokey flavor. I use oak and Hickory.

    If you really want to learn to cook good smoked foods, Google "smokering" and you will find a bunch of forums dedicated to the smoking foods and bunch of good people willing to help you learn.

    Sure...the smoker top and middle lift off. There is a pan that goes over the charcoal pit. The pan is used to create moist heat. It will produce steam while you cook. I recommend flavoring whatever fluid you put in the pan with fruit, fruit juice, or frozen concentrate, or wine, mixed with water. You can put your initial batch of charcoal in the bottom, (pit) and fire it up just as you would any charcoal grill. once the coals are ready, you can put the pan over them, put the middle section in, (with whatever meat you prefer), then finally the top. During cooking, to produce a smoky flavor, you can put water soaked hickory or misquete chips with the charcoal, it has a door for access. You can also add charcoal as needed to maintain the desired heat level thru the door. Remember, it takes longer to prepare food on the smoker, the key is low heat and longer cooking times. For example, I usually cook a boston **** at about 185 degrees for up to 12 hours. Bon Appetite!

    Not enough heat


    I have not gotten a solution from FixYa, but some of the responses to other questions have revealed my plan of modification to the unit. No i would not like the Premium Assistance Plan, yet.

    Hope you found your water pan. If not, I'm sure Brinkman can supply one or you might try checking at Sam's Club in the restaurant supply area (over by the food - not the fancy cookware section) for a mixing bowl that has the same diameter as the inside of your smoker. I saw some there today and while I'm not sure they had any large enough, they had some that were pretty large. Alternatively, put your second grill on the brackets for the water pan (if you didn't end up with a second grill, try Academy for an inexpensive replacement grill) then sit a large foil roasting pan with a couple of inches of water in it on the grill. Voila! Instant water pan!
