The valet button is located on the antenna, it is a push button near the center plastic section. The antenna is normally installed on the front windshield in the center.

Consider how the switch will be used before choosing a mounting location. Check for rear clearance before drilling a 9/32-inch hole and mounting the switch.The GRAY wire in the two-pin plug may also be used as a (+) ghost switch input and can be connected to any (+) switch in the vehicle. This is from the installation manual for the Viper 300. To answer your question, it is probably camoflaged. They only needed to tie +12vdc to the input line. What does this mean? Well, my best guess is, they are using one of your switches on your dash to act as the Valet function. Look for where the Gray wire, from the wiring harness of the Viper goes to: that WILL BE your hidden Valet switch. Best of luck!
If you follow this diagram, you should be able to locate your Valet switch. I have seen other questions like this and I believe that they have hidden the function by using an exsisting switch, seldem used(?), in your console. All you should have to do is eith tract the wire that comes from the port on the alarm modules body, or apply +12vdc to one of the leads identified for the valet function.
Open door, turn on ignition. Press and release valet switch then, press and hold valet switch. Press lock button on remote. Release valet switch, turn off ignition. Test.

The car's computer wont let it start? Well, if you changed the battery and the viper alarm is the issue; locate the push button valet/programming switch. Turn the ignition on, press and release the switch. The alarm will disarm and you can start the vehicle. To put the alarm in valet, turn the ignition on then off, within 10 seconds press and release the valet switch. The LED will illuminate solid to show that the system is in valet.

was it a professional or shade tree install? the following is off vipers website: disarming without a remote control This feature allows you to disarm the security system without the Remote Control should it be lost, damaged, or disabled. In order to disarm the system without a remote remote control, you must have the vehicle’s ignition key and know where the Valet button is located. Be sure to check with the installer for the location and the number of presses of the Valet button required to disarm the system. To disarm the security system, turn the ignition to the ON position. Press the Valet button the preset number of times (one to five times) within 15 seconds. After five seconds the system will disarm. If the system does not disarm, you may have waited too long; turn the ignition off and on and try again. if that doesn't work try this other
valet mode You can prevent your security system from automatically arming and triggering by using Valet Mode. This is very useful when washing the vehicle or having it serviced. In Valet Mode, the security system will not arm, even with the Remote Control, but all convenience functions (door locks, trunk release, etc.) will continue to work normally. To enter or exit Valet Mode: 1. Turn the ignition on. 2. Turn the ignition off. 3. Press and release the Valet button within 10 seconds. The status LED will light solidly if you are entering Valet Mode, and it will go out if you are exiting Valet Mode.
