Fan and A/C will intermittantly shut off completely. The fan will not work at all and no A/C. Then after a few minutes it will come back on.
You could have several problems. Usually a blower motor resistor will kill the fan and a pressure switch for the Freon will shut off the A/C. It sounds more like a pressure issue because the Freon constantly changes from liquid to a gas(and back again), so that as the system shuts down due to high or low pressure, the Freon stabilizes to a ratio which allows the system to briefly run again.
A blower resistor problem can be intermittent, but does not normally recover this way unless it is overheating.
There are Freon canisters which have pressure gauges on them. You would not want to overcharge the system, but you need to check the pressure. Over a long period of time, AC systems can be depleted of Freon. A depleted system needs to be patched and Vacuum pumped, but a low charge system can be helped with more Freon.
Try the fan blower. It should be inside the cab, on the passenger's side, under the glove compartment. Easiest way to check, when is not working, hit the plastic cover under the glovebox, if it starts, it is the blower. Sometimes you need the hit it several times, until you hit the actual blower.

If you have over 100k miles the nylon/plastic tip of the speedo cable might have broke off and or pulled out of the square hole that drives it. Although more rare you may have one of the gears on the side of the tranny worn. If you replace one make sure you use the same color. They use different colors for different applications like rear end ratios, tire size changes etc.
When it was starting to go did the speedo show solid or did the speed meter **** between say 20 and 40 over and over (example only)? If so the cable got so dry that it froze in place and caused the nylon end to break or bend and push the cable out of its hole. Years ago you could buy kits maybe some special place like JC Whit might have one. If it got dry you can simply pull it wire out of the cable, clean and lubricate it well when you slide it back in make sure you twist it as you go to spread the oil around.
If you have a low miles car and you find the speedomter gear teeth are worn off it also could have a dry cable. Don't replce the gear without lubricating the cable or you will soon wear out another gear.
A jerking speedometer is a sure bet that the cable is running dry. Some will even tick or slap as they travel each circle.
